This is one of my favorite sandwiches from my childhood. I always asked my mom to make them because they were soooo good. They were perfect for soccer games, picnic’s, the beach, or even camping, and I couldn’t get enough of them. I loved them because of the melted cheese, the warm and crunchy bread, and of coarse the delicious moist chicken. It’s just was a perfect little sandwich.
Now that I’m older I always pack these when we go camping with friends, because you wrap them in foil and instead of baking them in the oven you just put them right on the fire and they come out hot and ready.
I also think there good cold!!! Just put them in the oven to get the cheese melted and place them back in the fridge. They stay for about a week or so and I like to just pop them in the microwave for 1 minute and there good to go or eat them cold. These are great to pack for a lunch or a lunch box for the kiddos, especially be cause they are the perfect size!!!! There are so many ways to eat these and bring places the choices are unlimited. Especially because they are in foil so you can bake in oven for 15 to 20 minutes and put them in your picnic box and they will still be hot when you get to the park. Enjoy!!!
Here’s what you’ll need….
3 small cans of chicken
1 block of cheddar cheese
1 small bag of mixed veggies- 1- 1/2 cups you will use
1/2 cup of miracle whip or mayo
3 stalks of green onion chopped
8 rolls from the bakery-fresh!!!
1 tsp of Worcestershire
Salt and pepper to taste
Foil to wrap them!
THIS MAKES 8- You can always double this recipe!!!
First you are going to cook your vegetables in the microwave or on the stove until tender.
Place your chicken in a bowl and shred it. Place your green onions in the chicken and sprinkle with salt and pepper.
Now add in your miracle whip or mayo, as well as the Worcestershire. Mix all together.
Add in your veggies. you can add more or less if you like but i love the veggies in it.
Slice up your cheese and rolls next. You will take out your foil and cut 8 pieces as well.
Take your roll and add 2 slices of cheese on each side.
Scoop a lump of your chicken veggie mix on top of one slice of bread. top with other cheese bread and wrap up in foil. Polk 2-3 holes with a fork to get the bread to steam and crunch up a bit.
Bake in the oven on 350 for 15-20 minutes. Depending on if you wan the bread to be soft or crunchy. This will also get your cheese to melt and become scrumptious!
Let cool and serve!!!
