This soup is beyond delicious! It taste just like Paneras or maybe even better! I love anything with broccoli and cheese so this is by far my favorite soup! Its even better in a bread bowl but its not required 😉 This is a fantastic recipe to make for a snowy day. Enjoy!
Here’s what you’ll need…
1 tablespoon melted butter
1/2 medium chopped onion
1/4 cup melted butter
1/4 cup flour
2 cups half-and-half cream
2 cups chicken broth
1/2 lb fresh broccoli
1 cup carrot , julienned- I used a cheese grater
1/4 teaspoon nutmeg- this really brings out the flavor
8 ounces grated sharp cheddar cheese-yummm
salt and pepper to taste
I doubled this recipe because it only serves four and I like to freeze some as well.
Sauté onion in butter. Just like every other of my recipes lol.
Now add the melted butter and flour using a whisk over medium heat for 3-5 minutes. It will get thick easily so make sure you stir constantly.
Now add the half & half.
Add the chicken broth and let simmer on low to medium heat for 20 minutes.
Now chop up your carrots and broccoli and set aside.
Add the broccoli and carrots. Cook over low heat for 20-25 minutes.
Add salt and pepper to taste (I like a lot of Pepper). Return to heat and add your yummy cheese. Stir in your nutmeg and get a nice whiff of the fantastic smell.
