Bruschetta Pasta

This was way to good too not want to eat the whole bowl. It was so fresh and delicious. I love all these ingredients in regular bruschetta so putting them into a pasta was just a plus!! Be careful you might want to lick the bowl. My family loved this for family dinner along with steak, chicken, a beautiful salad, and garlic bread. I like to use whole wheat pasta but you can use regular to. This is a great idea for a large group. One packet of pasta fed about 12 people but you can double it if you would for some left overs!!! It also depends on the size portions you have. 

I made this at my dads for family dinner. I did all the sides and he took care of the chicken and steak.
HE is an awesome cook and I have learned a lot from him!

Here’s what you’ll need…

-1 box of spaghetti- regular or whole wheat
-1 bunch of basil
-5-6 Roma tomatoes
-1 cup of tomato sauce- See my recipe for that or your favorite store bought
-2-3 Tbs of Garlic 
-1 cup of Balsamic
-1 -2 Tbs of Sugar
-1 1/2 Tbs of olive oil
-S and P for taste
-Parmesan Cheese shredded for garnish

First you need to slice up your tomatoes and basil into small pieces just like you would do for bruschetta. Place in bowl and add salt and pepper to taste. Add in a bout 1/2 tbs of minced garlic. and 1/2 Tbs of olive Oil

Next add 1 tbs of minced garlic and 1 tbs of olive oil to a saute pan. Roast garlic for about 2-3 minutes. To not brown or burn. 

While this cooks. Boil your water and add your pasta to it with a pinch of salt. 

In another pot place one cup of balsamic and your sugar and cook to make a reduction. Whisk until its a little think.
This should take about 5-10 minutes. If it needs to be thicker add more sugar.

While your Balsamic Reduction and pasta cooks, Add your tomato basil mixture to the saute pan and cook on low heat for about 10 minutes. All the Juices will start to come out from the tomatoes and blend with the olive oil as well. It will smell delicious! 

Drain your pasta and place back in your boiling pan. Add 1 cup of your tomato sauce until its covered. 

Then add in your tomato basil mixture and mix together.

Place your Bruschetta pasta in a big bowl. Drizzle your Balsamic Reduction over the top and garnish with your Parmesan cheese. Serve and enjoy…

This would also be good with sliced up chicken in it as well….
