Buttermilk Blueberry Bread is great for a weekend or to bring for a breakfast! I love blueberry’s so this was a must! Moist and Delicious, I could hardly wait to eat it after it came out of the oven! Yummmmm
Here’s What you’ll need….
½ cup unsalted butter, room temperature
2 tsp. lemon zest or more — zest from 1 large lemon
7/8 cup + 1 TBS of sugar
1 tsp. vanilla
2 cups all purpose flour
2 tsp. baking powder
1 tsp. kosher salt
2 cups fresh blueberries- about 2 regular cartons
½ cup buttermilk
First Cream butter with lemon zest and 7/8 cup of the sugar until light and fluffy in a mixer.
Add the egg and vanilla and beat until combined.
While that mixes toss the blueberries with ¼ cup of flour, then in another bowl, mix together the remaining flour, baking powder and salt.
Add the flour mixture to the batter a little at a time, switching back in forth with the buttermilk. Fold in the blueberries last.
Use a 9×9 glass pan and make sure you grease it with spray or butter. Place the mixture in the pans and sprinkle with the TBS of sugar on top. Bake for about 35 minutes, but check it because it might need to go a little longer.
Cool for about 15 minutes before serving. Also great with Vanilla Ice cream.
