You can also just make this into a regular cake as well!
2-cups of sugar
2- cups of flour
3/4- cup of oil
1/2- cup of applesauce instead of another 3/4 oil…. he he this way its better for you!
2- tsp of baking soda
1- tbs of cinnamon
1- tsp of salt
3- cups of grated carrots
1/2-1 cup cup of walnuts
12 oz- powdered sugar
6 oz- cream cheese room temp
1 tsps- Vanilla extract
2 tbs- butter
2 tbs- milk
First thing you will do is grade your carrots
Then in the mixer add the flour, soda, cinnamon, salt.
Then add applesauce, sugar and oil and add the four eggs.
Fold in the carrots and nuts with a spoon
Place batter into cupcake holders or 9 x 13 cake pan. Bake for 35-40 mins for cupcakes or 45 for cake in the oven at 350 degrees
While these cook make your frosting and let it cool in the fridge. Beat together powdered sugar, cream cheese, vanilla, butter, and milk
Spread on cooled carrot cake!
