Panini’s are so much fun because you can add so many different items to them to taste good… It is just like a grown up grilled cheese! They are so simple to make and you can load it up with with different cheeses, meats, veggies, and sauces. This is a Mexican style Panini but fill free to add or change what ever you like. These flavors really burst into your mouth, and the creaminess of the cheese and avocado is to die for. Enjoy!
Here’s what you’ll need…
This makes 2 Panini’s
1-2 chicken breasts
1/4 red onions
1/2 red pepper
1/4 cup of cilantro
1/2 block of Monterrey jack cheese-Sliced
1 small avocado
4 slices of bread
S and P
First your going to cook your chicken with S, P and Garlic Salt on a grill or in a saute pan. Cook through about 4 minutes on each side. I like to slice my chicken in half or butterfly it so it cooks faster. Slice in a diagonal when finished on your cutting board.
While this cooks you will also slice up your red pepper and red onion and cook till softened. About the same amount of time as your chicken. I like mine to not be to soft because I like a little crunch in the pepper.
Prepare your cilantro by cutting them up into pieces. Slice cheese and Avocado into 1/4 inch slices.
Get all your ingredients together and get ready to assemble…
You will now begin to prepare your Panini. If you have a griddle like me this will be the best way to cook this. A George Forman also works. Place on medium to high heat. Or you can do it the old fashioned way like a grilled cheese in a saute pan you just will not get the panini marks.
Spray one side of the bread with your spray butter. Place on griddle.
You can now add your mayo if you would like. Add your red onions and red peppers first.
Next top with the chicken slices and cheese on top.
Now on the other side of the bread you will add your avocado and cilantro.
Place on top of the cheese and chicken side.
Press down together until golden brown and cheese is melted through.
Slice and Enjoy!
