Well everyone knows that I am a huge Mexican food fan so here is another awesome recipe with a very refreshing flavor.
It almost like making a pesto but with cilantro as the base instead of basil. It was so delicious and I will defiantly make this again and might be really good just on the grill! Fill free to add all your fix ins in your tacos and make them how ever you like. I also made these into soft tacos with these awesome tortillas that you cook your self. Check below for the packet. It comes as a flat dough and you place them on a griddle to cook them your self. So fresh and good!
Here’s what you’ll need….
3-4 chicken breasts
1 bunch of cilantro
1 tbs of minced garlic
2 tbs of chicken broth- I used chicken bouillon to make my own
1 Tbs of olive oil
Salt and Pepper
Beans- re fried or black beans
First take out your blender or food processor and place your cilantro without stems, garlic, chicken broth, olive oil and juice your limes into it and blend until smooth.
Slice up your chicken into small bite sized pieces and place in a bowl. Sprinkle with salt and pepper and place cilantro lime mixture on top coating all the chicken. You can marinate this for 30 mins up to 24 hours.
(I think this would be great also just on chicken breasts then placed on the grill and sliced later. I think charring would taste really good ;))
Place chicken in a saute pan and cook for about 7-10 minutes or till chicken is cooked through.
Take your dough tortillas and place on a griddle and cook until tortillas are puffing up and browning a bit on each side. These are sooooo good! ( you can find these were all the tortillas are.)
Take your chicken and place in fresh cooked tortillas and add your mix-ins.
Eat and enjoy!!!!
