Corn Beef and Cabbage

I love Corn Beef and Cabbage! It is a great tradition for St. Patrick’s day every year. I think we should be able to eat this way more often then once a year, so I like to buy a couple huge pieces and freeze them for later!!! Yummmy. Corn Beef has a lot of great flavor and when you cook it long enough it is so moist and tender. The best part is I put it in the crock pot all day, go to the parade, and come back ready for a yummy dinner. It really smells up your house also.

Here’s what you’ll need…
1 Large piece of corn beef- I like to get a 4-5 pound- it serves 4 -5 people.
This also comes with the seasoning package almost always!!! Make sure it does!
6-8 cups of water
1 head of cabbage
1 bag of baby carrots
1 small bag of red potatoes or You can any type of potatoes and cook them separate and make them into mashed potatoes like I do ( see my mashed potato recipe)

Take a large crock pot and place your corn beef and seasoning packet into the crock pot. add in your 6-8 cups of water. Depending on how pig your roast is. You want it to fill the crock pot 2/3 of the way. Place on low for 8 hours.

When the beef is starting to fall apart place in a serving bowl. Add a little juice in the bowl to keep tender. Cover with foil until serving time after veggies are cooked. 

In a separate large pot place 1 head of cabbage sliced up and your carrots in it. Add the remaining juice from the crock pot in the pot of veggies. Cook on high until tender 20-30 mins usually. I like my cabbage to be really cooked but it is up to you. 

If your doing potatoes in the crock pot add into the pot 4 hours into the cooking process with the meat. Other wise cook your regular potatoes to mash 45 minutes before serving all together. (see my mashed potato recipe)

When ready to eat slice up your corn beef and dip into the juice one last time to get warm again and moist, add your carrot and cabbage mixture to your plate and as well as your potatoes. Serve and enjoy!!!!!
