Creamed Spinach

I grew up eating creamed spinach and it is one of my favorite things to eat from Boston market!!! If you have a rotisserie chicken you have to have creamed spinach to go along with it. I had to make a copy cat recipe of Boston Markets because Ryan just loved it. I just substituted cream for milk and it taste just the same. This recipe is so simple and easy, you would think it would be so hard but its not. If you have a hard time making your kids eat some vegetables, this would be a great one to try with them. I am sure that they will love it. This also makes a lot so you can make it for a party of 8.

Here’s what you’ll need…

2 frozen bags of spinach- 12 oz bags
4 tbs of butter- or margarine- I used Light – divided
1/4 cup of flour
1 cup of 2 % milk
4 oz cream cheese- You can use reduce fat or low fat
1 small onion- chopped
3 garlic cloves- minced
1/4 cup of water
1 cup of Italian blend cheese, or Parmesan
1/4 tsp of salt
1/4 tsp of pepper
1 dash of nutmeg

In a small pot over medium heat melt 3 tbs of butter. Add your salt, pepper, and nutmeg.Stir in flour.

Slowly whisk in your milk. Then add your cream cheese. This will get thick and smooth… its ok!!!! Remove from heat and set aside.

In a Large Saucepan cook your onions, Garlic and the remaining 1 Tbs of butter until onions are soft and transparent.

Stir in Spinach and water. Reduce heat and cover, simmer and stir occasionally for 8 minutes until spinach is cooked, thawed and ready to go.

Stir in cream mixture to the spinach mixture and return to heat on medium. Add in your cheese and cook for 2 more minutes.

Plate and serve!!! Yummmmm.

You can add more salt and pepper if you would like. I also like a little more nutmeg in mine.
