Mallory’s Award Winning Chili

My award winning Chili! Very delicious and great for the fall. Yes my secret item is BEER! Enjoy


1 and ½ pounds of ground beef
1 Large yellow onion
1 Green pepper
1 small can of tomato paste
1 Large can of diced tomatoes
1 bottle/can of Bud light
2 cans of chili beans
2 cans of kidney beans (1 light and 1 dark)
1 can of pinto or black beans
3 tablespoons of flour
Onion Salt
Garlic Salt
Chili Powder
Salt and Pepper
Tabasco (optional)
Were going to start with 1 and half pounds of ground beef. Place in pig pot and brown with half a tablespoon of Salt and pepper and 1 teaspoon of garlic salt and cook on medium heat to brown the meat. Do not cook meet all the way because it will cook when all ingredients are cooking together.
While meat cooks chop up the onion and green pepper.
Take the beef out of the pot and place aside. Keep the fat from the beef to cook and brown the onions so that they glaze over. Cook onions until golden brown and add sprinkle with a teaspoon of onion salt.
Then add the green pepper after onions are golden brown. Let cook for about 2 minutes together. Sprinkle with a little Salt and Pepper to taste.
Next add 3 tablespoons of flour to almost make a rue. This will help thicken the chili. Mix all together.
Add the tomato paste and stir for 1 minute.
Add the large can of diced tomatoes. Make sure it is nice and thick.
Next add the ground beef back in and add 2 tablespoons of chili powder and a teaspoon of garlic salt. Cook on low to medium heat.
Next add 1 and half teaspoons of ground cumin and a bottle or can of bud light and stir. Let sit for 5 minutes. While you wait open up all the cans of beans.
Add your 5 cans of beans and 2 ½ cans of water. I like to use 2 cans of chili beans, one light red kidney bean and 1 dark red kidney bean and 1 can of pinto beans or black beans. Do not drain the beans!  The juices in the can give a lot of flavor to the chili.
Now finish with a little more seasoning to taste. I usually add another teaspoon of chili powder and sprinkle with salt, pepper, cumin, and garlic.
If you like it a little spicier add a couple tabs of hot sauce for a little kick!
Cook for a couple hours on low so it thickens. Stir about every 30 minutes or so, so it does not burn the bottom.
Serve with Cheese, Crackers, and Sour Cream!
