One of my biggest loves is mashed potatoes. I could prolly eat the everyday if I could. So being on a pre-wedding diet I have been trying to still eat things I like but are a lot better for you. So I made mashed Cauliflower instead and they were delicious and about 1/4 the calories to mashed potatoes! I might be eating these a lot now! Also Cauliflower is so inexspensive also. I love it!
Here’s what you’ll need.
1 Head of Cauliflower- if your serving more then 3-4 people I would do 2 heads.
2 Tbs of butter
1 Cup of milk- or buttermilk is better.
1 cup of Cheddar cheese
Salt, Pepper to taste
Garlic Powder- Optional
First take a microwave safe bowl and slice up your cauliflower and place in it. Add your milk and 1 tbs of butter.
Microwave for 5 minutes. Take out and stir together making sure the cauliflower is being covered by the milk/butter mixture.
When it is done cooking and they will be soft, place in a blender or food processor with the cheese, 1 tbs of butter and season it with salt and pepper to your liking..
Serve and enjoy!
