Mexican Beef and Bean Bake

Another yummy Mexican Recipe that will have everyone wanting seconds. It is in between a Lasagna and a Pizza. It has Just the right amount of Mexican ingredients to really make it pop. If you add some hot sauce or Jalapenos to make it really kick, you would be in heaven if you like spicy food. This a great dish to make and have leftovers, or make 2 pans and freeze one for later.

Here’s what you’ll need….

1 pound of ground beef
1 package of flour tortillas-Medium
1 can of black beans- drained
1 can of Re-fried beans
2-4 cups of cheese- Depends on how cheesy you like it
1 can of red enchilada sauce
1 package of taco seasoning- for beef

Tomato, Lettuce,  and Avocado for garnish

First cook your ground beef in a skillet. Add your Taco seasoning.

Next add your black beans and Enchilada sauce to the beef mixture once the beef has cooked and browned.

Mix all them together and cook on medium heat for 5 mins.

Take a large square glass pan and some of your beef mixture to the bottom of the pan to slightly cover it. This will help not make the tortilla stick. This is just like making a lasagna.

Now add your tortilla on top of the mixture and add a small layer of re-fried beans. Then the beef mixture again then the cheese….. Tortilla, re-fried beans, beef mixture, and then cheese.

You will have about 4 layers of tortillas- give or take one, depending on how thick of layers you make.

Bake in the oven on 350 degrees for 15-20 minutes or until all the cheese on top has a great melted crust.

Slice in squares. Add sliced tomatoes, avocados, and lettuce on top.

You can also add jalapenos or Hot sauce to the mixture or on top for some more heat.
