Monterrey Chicken

This is such a good chicken meal and Ryan loves it!!! The BBQ sauce with the bacon and melted cheese… yummmmmmm. It melts in your mouth. It is also good then next day because all the flavors really soak in… Anything with bacon tho will be really good!!! Great meal for a large group or just a nice family dinner. I served this with a pasta and fresh steamed Broccoli! 

Here’s what you’ll need…
-2-3 large chicken breasts- sliced in half or butterflied- this makes 6 pieces 
-Shredded cheese or slices
-1 packet of bacon
-Green onions
-BBQ sauce
1 can of Rotel tomatoes or fresh tomatoes sliced into small pieces
-Salt and pepper
-Garlic salt
-Olive Oil

This also might be better if you marinate the chicken in BBQ sauce befor….

Pre-heat your oven to 325 degrees

First you need to slice your chicken breasts in half. Sprinkle salt, pepper, and Garlic over each side. Place in Saute pan or Griddle with olive oil and brown on each side for a bout 5 minutes each. 

In another pan or the other side of your griddle cook your Bacon till crispy. 

Slice up your tomatoes and Green onions at this time.

Take off chicken and place on a baking sheet with foil. 

Now here is the fun part adding all the yummy toppings.. Place about 1/2 a TBS of your favorite BBQ sauce and baste it all over the top of the chicken with a basting brush.

You can either break up your bacon into pieces or place them whole on top of chicken.

Now add your green onions and tomatoes on top of the bacon.

Last but not least add your cheese. As little or as much as you want. 

Place in the oven for about 5 minutes or until the cheese is melted!!!

Slice and Enjoy!!!
