No bake energy balls- This is like an oatmeal ball of deliciousness in your mouth. So good and really gives you a pop of energy- I made a batch and just stored in the fridge and ate one in the morning after my breakfast and out the door. Super easy to make and simple- NO BAKING! I love the Honey and peanut butter flavor, You can also add a little light brown sugar to make sweeter if you would like.
Here’s what you’ll need…….
1 cup (dry) oatmeal (I used old-fashioned oats)
1 cup toasted coconut flakes
1/2 cup chocolate chips
1/2 cup peanut butter- I added about 1/4 more peanut butter to mine- made them form better
1/2 cup ground flaxseed
1/3 cup honey
1 tsp. vanilla
1/2 cup brown sugar (optional)
First, stir all ingredients together in a medium bowl until thoroughly mixed.
Let chill in the refrigerator for half an hour.
Once chilled, roll into balls of whatever size you would like.
Store in an airtight container and keep refrigerated for up to 1 week.
