Sashi’s Bruschetta

This is an awesome recipe that i got from a family friend Sandy Lasky. It’s one of my favorite things to make for Italian night. We have a big Christmas Eve Italian feast so I always make these. Be careful tho because you can never just have one. The tomato recipe can also ust be used on top of fresh mozzarella and bread if you don not like the pesto and goat cheese. But highly suggest you try it with goat cheese and pesto first!!!! Yummmm.

Here’s what you’ll need….
1 bagget-
4-5 smaller tomatoes or 2 large
olive oil
garlic salt
salt and pepper
1 package of goat cheese
1 pre-made pesto sauce- or follow my pesto recipe on another page

I Doubled the recipe for a party of 20
First slice up your tomatoes into small pieces. place in bowl and add about 1-2 tbs of olive oil. Add in your fresh garlic about 2- tsps or you can use garlic salt. 1 tsp of salt and pepper each. Taste if you think it needs more of any of it. I also place about 1 tsp of the pesto in it. this is optional.

Slice your bagget in to 1/2 inch pieces and place on cookie sheet. Brush with either olive oil or spray butter. Sprinkle with Garlic salt. Place in the broiler on high till they are golden brown.

Now spread your goat cheese to make a thin layer on the bagget.

Add 1/2 tsp of pesto that covers the goat cheese. Give or take a little.

Last add your Tomato mixture.

Serve and Enjoy!
