This recipe comes from my oldest sister Kimberly! These ares so delicious and its a great appetizer for a party or a great dinner as well. The Shrimp is very easy to cook and its fast!! The Corn tortillas she gets are so yummy! They really make the dish… They almost taste like flour tortillas but there corn!
Here’s what you’ll need…
1 bag of uncooked Shrimp
1- can of black beans
1 head of cilantro
1 bag of Monterrey jack cheese
1 packet of Fajita seasoning
1 bag of corn tortillas- or you can use flour if you cant find these ( picture BELOW)
Salsa for dipping
First, un-thaw your fish and rinse.
Cook shrimp in a saute pan with fajita seasoning. Shrimp cooks very fast so this should only take about 2-3 minutes.
Chop up your cilantro and drain your black beans and set a side.
Place tortillas in larger pan and place cheese, black beans, cilantro, and cooked shrimp on top. Cook and then flip to toast the tortillas. You can add a little butter to help toast the tortillas
Slice with pizza cutting knife and serve with Salsa of your choice. Enjoy
