Strawberry Balsamic Bruschetta

I am a fruit nut and any appetizer you can twist and make with fruit is an A+ idea for me. I love Bruschetta in general( Check out Sashi Bruschetta Recipe)so this was a fantastic sweet one. But it also has a not sweet taste with the balsamic and basil in it. I also love goat cheese so this was just spectacular on it. Perfect appetizer for a fancier dinner party!

Here’s what you’ll need…
1 baguette- sliced
1 container or log of goat cheese
1-2 bins of fresh strawberries
1 bunch of basil- 1 cup – 1 and 1/2 cups
1/2 cup of balsamic- give or take a little
1 Tbs of sugar
olive oil

If you do not like goat cheese I think cream cheese would be great too. 

First you will slice your baguette up into 1/2 -1 inch pieces. Spread Olive oil on top of them. Bake in the oven on BROIL HIGH for 2 mins or until golden brown! Make sure you watch them they will burn fast!!!!

Next while those cool you will slice up your strawberries into bite sized squares. Just like you would do tomatoes. 

Slice up your basil into little strips

Place strawberries, basil and your balsamic into a bowl. Add the sugar last. Taste it and add more balsamic if you would like.

Now that the bread has cooled spread your goat cheese on. If you do not like goat cheese cream cheese would work also. Make a thin layer. 

Last but not least add to the top your strawberry mixture.
