Tomato Marinara Sauce

This is a fantastic recipe for tomato/marinara sauce straight from Italy’s cooking school that my mother and step father went to. This recipe is so delicious but I will show you some things you can do to make it the short cut version. This sauce is perfect over pasta, to cook meatballs in, for homemade pizza’s, and plenty more things. I like to double or even triple this and freeze some in the freezer to take out when ever I need it.

Here’s what you’ll need…
4 1/2 pounds or 3 tins of whole tomatoes- I used fresh but you can by canned whole tomatoes as well
1 small onion diced
3 garlic cloves
5 Tbs of olive oil
1 bunch of fresh basil- so about 1 1/2 cups
salt and pepper to taste
1/2 cup of red wine for extra flavor-Optional

This makes 1 liter-enough for 4-5 people
This is why I like to double it

First you want to clean your fresh tomatoes and place in a saute pan and heat them. You will then either smash them your self with potato masher (some of the skins you will throw out) or place through a food mill( like Picture) or you can even put through your food processor.

Also when I double it I usually cheat and add some canned tomatoes with basil for some great flavor as well as the whole Vine tomatoes. I feel like this has tasted the best. Also HUNTS IS THE BEST!

Next your going to heat in a saucepan the onions and garlic with the olive oil and fry them until the onions are golden. 

Cook the tomatoes and your onion garlic mixture for about 15 minutes and add your salt, pepper and your basil leaves. 
You can either chop up your basil leaves, place in food processor and lightly slice them or tear them up by hand. Place them in the sauce as well. I like a lot of basil so the more the merrier!

Do you feel really Italian yet!?!?!

Cook up for as long as you would like until you are ready to serve. The longer it sits the more of the flavors come out. This is also when you can add your wine if you would like.

If the sauce is too suite because of the tomatoes add a half teaspoon of baking soda.

Place over pasta or all sorts of items like I said above!!!! ENJOYYYY
