Pineapple Sheet Cake

I love pineapple and I love baking with it. It smells so good in your kitchen when it is baking in the oven! Yummmmm. This is a great recipe for a thinner cake and not super super super sweet but defiantly the right amount of sweetness. I love the chunks of pineapple in the cake and the cream cheese frosting on top is to die for! It just melts in your mouth when you bite into it!! I hope you like it as much as we did. This is a great recipe to make for a large group because you can cut them into smaller or bigger pieces depending on how many people they are! Also this a great dessert for a summer BBQ!!!!!
Here’s what you’ll need….
2 cups flour
2 cups sugar
2 tsp. baking soda
1/4 tsp. salt
2 eggs
20 ounce can crushed pineapple
1 tsp. vanilla
1/2 cup nuts- I left out due to allergies
Frosting:
8 ounces cream cheese
4 T. butter
3 cups confectioners sugar
1 tsp. vanilla
1/2 cup nuts- optional
 

First, Mix all ingredients together until smooth. 

Pour into greased 9×13 inch baking dish and bake in a 350 degree oven for 25-30 minutes or until a toothpick comes out clean.

 

Now we can make the icing….
Beat butter and cream cheese until smooth and creamy. Add Vanilla. Slowly add sugar and blend after each addition. Fold in nuts if desired.
 Frost cake while still a bit warm.  I sliced them into strips because i served it to about 25 people. Cut into small or big blocks!
