Zucchini Bread is Delicious and the Family I nanny for had soooooooooo many Zucchini’s, they just kept giving them to me… So first I made the Zucchini and carrot Bars with Cream cheese frosting and i thought I had to make some Loafs of just plain old Zucchini bread…. But WAIT this isn’t just plain old Zucchini bread. Its made with APPLE SAUCE instead of oil…. It is much healthier this way and way more Moist!!!! Enjoy
Here’s what you’ll need….
1 cup Sugar
1 cup Brown Sugar
1 cup of Apple Sauce
1 tablespoon Vanilla
3 cups Flour
1 teaspoon Baking Soda
1 teaspoon Salt
1/2 teaspoon Baking Powder
1/2 cup Nuts (optional) I like using walnuts
1 tablespoon Cinnamon
1/4 teaspoon nutmeg
2 cups Zucchini
(If you don’t have apple sauce you can use 1 cup of oil)
Now I doubled this recipe because its so good I had to bring it people!!! Sharing is Caring!!!!
First you need to grade your Zucchini. I used my Food Processor, but a cheese grader would work as well. Cut of the ends and peel the sides a bit. You can use the skin but I only use a little bit of the skin!!!
Next, place your white sugar, brown sugar, applesauce, vanilla and eggs in a mixing bowl. Mix together until blended.
Next add your dry ingredients. Your 3 cups of flour, baking soda, salt, baking powder, cinnamon, and nutmeg. Mix together with met mixture.
Last but not least add in your Zucchini.
Now Grease and Fill pan about 2/3 full and bake at 350 for about an 55 mins to an hour. I like to get the disposable loaf baking tins because there a tiny bit smaller and this batter will fill 2 of those. (Remember I made 2 batches)
If you have extra batter you can either make muffins or place in a small loaf tin.
Place a tooth pic in the middle to make sure its cooked through. If the tooth picks comes out clean it is done!!!
