Simple Chicken Pot Pie

We all know that pot pie is a comfort food but sometimes we don’t have the 4-5 hours to make one from scratch. Here is a great recipe you can make one with using a rotisserie chicken and some other ingredients. It smells delicious through your whole house and really is a great comfort food dish when it is chilly outside. I love getting rotisserie chickens from Costco because thye are sooooooooo good and only 4.99. This dish really costed about $10 bucks!!! You could also use this recipe for extra Turkey from thanksgiving and make a Turkey pot Pie! Enjoy

Here’s what you need….

  • 1  10-ounce package  frozen mixed vegetables- I just used carrots and peas. But you can add corn and green beans if you would like. 
  • 1  10.75 ounce can of potato soup
  • 1/2 cup of milk
  • 1/2   teaspoon salt
  • 1/2   teaspoon of onion powder
  • 1/2   teaspoon  black pepper
  • 1 tsp of dried Thyme
  • 1  10-count tube  refrigerated biscuits  

Heat oven to 400° F. Combine the chicken after you cut it into cubes or shred it, vegetables, soup, salt, thyme, pepper, onion powder and 1/2 cup of milk in a large bowl.


Transfer the mixture to an oven-safe casserole, cover with foil, and bake for 15 minutes.


Remove the foil, cover the filling with the biscuits, and bake until the biscuits are golden brown and cooked through, about 15 minutes. The Biscuits will be gooey on the bottom, they will be like a dumpling. IF you want your biscuits to cook through, cover with foil and cook for 5-10 minutes more. 


Let cool for 3-5 minutes and serve!!! Enjoy! Yummmmmmmmm

    I tried this tonight, but tweaked it with what I had at the house. Made it with corn, carrots and potatoes, and used Cream of Celery. SO AMAZING! This was easy to make and a new favorite of the husband’s! He actually said “You’ve been holding out on me with this recipe!”

    I really enjoyed this recipe! I’m going to use more potatoe soup next time. I also made my own chicken and just shredded the breat meat.

    Yummy it’s coming out so good I added a cup of cheeses and used left over oven fried chicken
