Mini Cherry Cheesecake

If you love cheesecake as much as I do you will love this simple and easy recipe that will make perfect mini cheesecakes for a family dinner or a party. The texture is fantastic on these mini cheesecake you will be wanting more then one. Enjoy!


Here’s what you’ll need………

2 8-ounce packages of  cream cheese, softened to room temperature!!! (I use one low fat and one regular.)
1 tsp vanilla

3/4 cup sugar
3 eggs
1 Tbsp lemon juice
Sprinkle of lemon zest- about 1 tsp. 

Vanilla Wafers (Do not use the reduced fat kind, buy the regular or your wafers will float up to the top!)
1 Can cherry pie filling. You could also use frozen strawberries




First pre-heat your oven to 350 degrees. 

Now we will make the filling, make sure your cream cheese is softened to room temperature. If it’s not, the batch will come out clumpy. This is very important so you get the correct texture.

Mix together your 2 packages of cream cheese, sugar, eggs, vanilla, lemon juice and lemon zest until smooth. Make sure you use your kitchen aid or a hand hell mixture. you wan the filling to  be very blended and creamy! 

If you don’t have a zester you an use a cheese grater on the skin of your lemon to get the zest. :)


Now take your muffin or cupcake tin and line with a cupcake liner. Make sure you place the wafer face-up inside each one. This will make your crust for your cheesecake. 


Scoop mixture onto wafer, filling cup 3/4 full.


Bake at 350 degrees for 20-22 minutes.


Refrigerate for 20-30 minutes. Once chilled, scoop cherry pie filling atop each mini cheesecake I put 3 cherry’s on top of each. Chill again until served.
