Ham and Spinach Scrambled Egg Cups!

So my Husband loves when I make scrambled eggs on the weekends with all the fix ins! He loves them so much that he asks from them every day but He works a lot earlier then I do and there’s no way I am getting up to make them for him every morning! Soooooooooo I came up with a perfect solution
Scrambled Egg Cups! I would make a batch and then he could grab 2-3 in the morning, microwave them really quick and be on his way! This was PERFECT! And they are so delicious I must add! The best pat is you can change the fix ins to whatever you want every week!  But this recipe has our favorites! I hope you enjoy these as much as my husband does!
Also this would be great for a Breakfast Party or Brunch!!!!
 

Here’s what you’ll need….

8 eggs
1 1/2 cups of cheddar cheese
1 cup of diced ham
1 bag of spinach
1 Tsp of Garlic Salt
S&P to taste
4 TBS of milk
1 TBS of Olive Oil for Spinach Saute
Muffin tin
Non stick spray

OTHER Options…
Bacon Bits
Mushrooms
Different Cheese
Bell Peppers
Onions
Turkey
Sausage!
GO crazy People!

First, go ahead and crack your 8 eggs in a large/medium mixing bowl.
We are going to season our eggs now with S and P, and as well as Garlic Salt. I use about 1 1/2 Tsp. But add as much or as little as you would like. I loveeeeeee Garlic in everything tho!
Also add 4 Tbs of milk now too! Milk is great in scrambled eggs because they give them a better texture and let them fluff up better!
Whisk those eggs up!
It’s spinach time! Place 1 TBS of olive oil and Saute your spinach! It will go from a huge pile, to a small as it cooks down! This should take about 3-5 minutes. Make sure you salt your spinach so it has more flavor.
Now, while your spinach cooks, slice up your ham to make one cup! I like smaller pieces in my cups so they get in every bite but its your choice on how big or small you would like them!
Once your spinach is sauteed, place in the egg mixture and get ready to brown our ham!

Brown up your ham… it give sit more flavor when you cook it a little more!!! Brown for 3-5 minutes!

  It should look like this when its done!!!
While your ham finishes cooking add your 1 1/2 cups of cheddar cheese!
Last but no least…. add you ham!
Mix all together!
Spray your muffin tin with non stick cooking spray!
  Fill 3/4 way up with your mixture!!!
 
Bake in the oven at 375 degrees for 18-21 minutes! I would check at 18 minutes and take a tooth-pic and stick in middle. if it comes out clean they are good to go!! if not cook for the remaining 2-3 minutes!
 Let cool 3-5 minutes before serving.
BUTTTTTTTTTTTTT if you are like me I place them in a zip-lock bag and grab 2 every morning and zap them for 30 seconds and it is my grab and go breakfast! They should last about 5-6 days in fridge!
