Chicken Stir-Fry

Would you like something packed with protein and lots of veggies? Then this Stir fry is the way to go! My husband and I try to eat this about once a week so we have a no carb night but fill free to top over white or brown rice! The best part of a Stir- Fry is that you can really make it your own and add what ever veggies you have left over from the week or pick up your favorites at the store and throw them in! You really get to make it your own! Enjoy!

Here’s what you’ll need….
1 package of chicken tenderloins- Sliced into 1 inch cubes (Breasts are fine too)
4-5 cups of veggies- I use:
  • 1/2 cups of Carrots- which you will cook first
  • 1/2 medium yellow onion
  • 1/2 of a red bell pepper and a yellow pepper- I like buying the small peppers in a bag because they are sweeter and they come with red, yellow, and orange!
  •  1 cup of Broccoli
  • 1 package of Mushrooms
  • 1 green zucchini
  • 1 yellow squash
  • 4  stems of green onion
  • Other Options- Water Chestnuts, Snap Pees, Ect….
1 TBS of Garlic Salt
1 TBS of ground Ginger
Salt and pepper to flavor your meat before cooking and for veggies
1 Tsp of Onion Powder
1 TBS of Olive Oil or Vegetable Oil
1 TBS of soy Sauce
1-2 Cups of Teriyaki Sauce- Depending on how much sauce you like.

This is my favorite Brand with the sesame seeds!

Ok lets make a Stir Fry! Feel free to use a large Skillet, A Wok, or I like to use my large Dutch Oven Pot ( the red one in the pictures) Make sure you have a lid for your pan! Alice up all your veggies that need to be sliced up!

First we are going to steam our carrots in the pot with a little water. Steam on high with a LID for 5-6 mins. Take them out and place in a bowl for later.

Next add your SLICED onion with a Tbs of Olive oil or Vegetable Oil. Cook on medium heat. for 2 minutes.

Now we will add our peppers to the onion mixture and as well as the green onions. Cook for 2-3 minutes.

Take out onion and pepper mixture and place in bowl with carrots.

Now add the rest of your vegetables and place the lid on to steam for 5 minutes or until soft! I add about 1/4 cup of water to help steam. Sprinkle a little Salt and Pepper to season the Veggies.  After 5 minutes you can add the carrots/onion/ pepper mixture back in!

 Add in your 1 Tbs of Soy Sauce to the veggie mixture!

After your Vegetables are cooked through take out and place in a bowl so we can cook our chicken.

Now season your cubed chicken with the salt, pepper, and Garlic Salt and cook until meat is cooked through- 6-10 minutes.

Add your veggies back in with the chicken! Sprinkle your onion powder and ginger on top off mixture and stir!

Cook for 2 more minutes and at the last seconds we will add our Teriyaki sauce! (You want to add this last because you want to keep the sauce thick and when it cooks for a while it really thins out!)

Serve over rice or just in a bowl with out!

    This looks delicious! I didn’t know teriyaki sauce thins out the more it cooks. Great tip!!
