Mini Cheesecake Cookies

Cheesecake and cookies put together! I know!!! Sounds delicious…….Well it is!

I topped these little bites of heaven with Caramel but fill free to do a topping of your choice! Chocolate fudge, Strawberry Sauce, Cherry pie filling, Jam, or whatever you like! Make them your own!!!

These are a perfect finger food dessert for a party or for your little ones birthday treat at school. I hope you like them as much as my family did! Enjoy!


Here’s what you’ll need…

1/2 a Box of White Cake Mix

1 Egg

4 oz. Cream Cheese

2 tbsp. Melted Butter

1 Cup Caramel Sauce

1 Cup Graham Cracker Crumbs

A  mini cupcake pan




Ready… Set… Go….. First, in a medium bowl mix together the Cake mix, melted butter, egg & cream cheese..use a spoon to really smear it and blend it well into a dough-ish consistency!


Scoop some batter into a cupcake pan..about 2/3 full!
Bake them at 350 for about 12 minutes, just until they’re firm.While they’re warm, indent them with something smaller than they are to form a cookie cup… I used a lid to an old frosting tube!


Let them cool and then rub some water (or melted butter) lightly around the rim of the cookie cup and dip it into some Graham Cracker Crumbs.. I just dipped my cups into melted butter then placed straight into the graham cracker mix 


Fill them up with Caramel Sauce..or whatever topping you’d like.


Now smell and taste these little bites of Heaven!!!
