What makes a snickerdoodle a snickerdoodle??? A cinnamon and sugar topping! These are a great alternative to a brownie or a cookie bar, when you are just bored of making them. These snickerdoodle blondies bars have the same texture as a brownie but are more of a vanilla flavor with cinnamon and sugar taste! These are so light and fluffy compared to a heavy rich brownie you will want to make them all the time! I hope you enjoy this delicious cinnamon and sugar treat!
Here’s what you’ll need….
2 2/3 cups flour
2 tsp baking powder
2 cups packed brown sugar
1 cup salted butter, room temperature
1 Tbsp vanilla
1 tsp of ground cinnamon for batter
Cinnamon and Sugar topping:
2 1/2 Tbsp white sugar
2 tsp ground cinnamon
Pre heat your oven to 350 degrees.
First, combine the butter, eggs, brown sugar, and vanilla in a large mixing bowl or kitchen aid!
Add in your dry ingredients. The Flour, baking powder and ground cinnamon.
Grease or Pam 1- 9×13 dish. Pour the batter into the greased pan. The batter will be very thick and sticky. It’s almost like a cookie mixture. But don’t worry that’s exactly what your going for! (PS I Doubled this batch that’s why there’s 2 pans!)
Combine the cinnamon and sugar topping ingredients and sprinkle over the top of batter! Make sure you get it all over every section so each piece gets some!
Bake at 350 degrees for 25-30 minutes . Once it cools, it will harden on the top a little bit. Don’t worry the center will still be perfectly light and chewy!.
Slice into squares or small bars and enjoy!!!!
