Sharp Cheddar with Broccoli and Ham Quiche

Hello all! I have a friend who has her own food blog as well and she has some awesome recipes on it! It is called Erika’s Eats. You must check it out!!! I occasionally have guest blog recipes on my blog and when I saw her post this recipe (Sharp Cheddar with Broccoli and Ham Quiche) I knew I had to have this make an appearance on my blog!!! This is a fast and easy recipe for a delicious Quiche! Perfect for breakfast or brunch or anytime really! I hope you enjoy this yummy recipe and you go check out Erika’s  blog as well!

Ingredients:
1 stick of butter
1 Cup of Half and Half
1 Cup of thawed frozen hash browns
1 Cup of shredded sharp cheddar cheese
Chopped green onion
1/2 Cup of chopped ham
1/2 Cup of broccoli
3 Eggs

Step One:
Preheat oven to 450 degrees. Spray pie pan with non-stick spray. Melt stick of butter and mix with hash browns. Press into pie pan to form a crust. Cook for 20-25 mins.

Step Two:
Lower oven to 350 degrees.
Whisk eggs and 1/2 and 1/2 in a mixing bowl. Chop onion and broccoli and dice the ham. Add to eggs along with the cheese. Mix. Spread onto of cooked crust and place back into oven for 30-40 mins.

Step Three:
Allow the quiche to cool and serve with sour cream (optional). Lastly, ENJOY!

Chicken Cordon Blue Casserole

I love making Chicken Cordon Blue because my husband loves it, but it is time consuming and it is hard to make for a lot of people. So I found this Casserole dish and decided to try it out!!! It was a great dish, simple and easy to make, and I loved that you can just buy a rotisserie chicken and use that. It made it quick and easy!!! My husband and I do not like Swiss cheese so I decided to try our favorite Havarti cheese in it and it was still AMAZING! But use what cheese you prefer! I hope you enjoy this casserole! It would feed about 6-8 people also!!! This might be the new dish I bring when someone is sick or has a new Baby!!!! Enjoy!

Here’s what you’ll need…

1 large rotisserie chicken, meat removed and pulled (about 5-6 C)

1/2 pound sliced deli-style black forest ham, chopped

1/2 pound sliced swiss cheese

Sauce:

4 Tb butter

4 Tb flour

3 C milk

1 Tb lemon juice

1 Tb dijion mustard- I used 1 Tbs of Ground Mustard instead

1  tsp salt

1 Tsp of Garlic Salt

1/2 tsp smoked paprika

1/2 tsp pepper

Crumb Topping:

4 Tb melted butter

1 1/4 C seasoned bread crumbs- I used Panko!

1/4 C parmesan cheese

Preheat oven to 350 degrees and spray a 9×13 casserole dish with nonstick spray.  Layer the chicken in the bottom of the dish followed by the ham and finally the Swiss/Havarti cheese.

In a medium saucepan, melt the butter over medium heat.

Whisk in the flour and cook for 1 minute. Slowly add the milk, whisking to keep clumps from forming.

Turn the heat to high and cook until the sauce thickens and boils completely, whisking often.

Remove from the heat and add the remaining sauce ingredients.

Pour the finished sauce over the base layer already in the dish.

In a small bowl, mix together the topping ingredients until the butter is evenly distributed over the crumbs.

Sprinkle over the top of the dish and bake for 45 minutes.

Allow to cool for 10 minutes before serving so the sauce will thicken just a bit.

Cake Batter Chocolate Chip Cookies

Yes….. You read the title of the cookies correctly…. Cake Batter Chocolate Chip Cookies! I did find this recipe on Pinterest and my jaw fell to the ground immediately. After making these with a friend and her kids…. I new these would be a favorite! Not just for adults but for kids as well. The kids love pouring in the Colored sprinkles and making these cookies into balls for baking. It is a great recipe for the kids to help out with and they really help out with eating them too! I hope you enjoy these delicious cookies!!!

Here’s what you’ll need…..

1 and 1/4 cup all-purpose flour

1 and 1/4 cup yellow or white boxed cake mix

1/2 teaspoon baking soda

3/4 cup (1.5 sticks) unsalted butter, softened to room temperature

1/2 cup granulated sugar

1/2 cup light brown sugar

1 egg, at room temperature

1.5 teaspoons vanilla

1 cup chocolate chips (I used a blend of white and semi-sweet chocolate chips)

1/2 cup sprinkles

(Makes 2.5 – 3 dozen cookies)

Alright…. lets start to make these incredible cookies… shall we??? In a large bowl, sift together flour, cake mix, and baking soda.

Set aside. In a separate bowl, cream together the butter and sugars on medium speed. Mix in the egg and vanilla until creamy.

Add the flour mixture to the wet ingredients and mix until just combined. Do not OVERMIX the dough.

Fold in the chocolate chips and sprinkles. (Let the kiddos poor them in)

Cover and refrigerate dough for at least 1 hour, or up to 4 days. This step is mandatory. The dough is fairly sticky, so chilling the dough is required in order to avoid the cookie from spreading too much.

Preheat oven to 350 degrees.

Scoop rounded tablespoons of the cold dough onto an ungreased baking sheet. Shape your cookie dough balls to be “taller” than they are wide, as pictured above. Make sure to keep dough chilled when working in batches. Bake for 10-12 minutes until edges are slightly browned.

The centers will still appear very soft, but the cookies will set as they cool.

Allow the cookies to cool on the baking sheet for 4 minutes and transfer to a wire rack to cool completely.

Snickerdoodle Blondies

What makes a snickerdoodle a snickerdoodle??? A cinnamon and sugar topping! These are a great alternative to a brownie or a cookie bar, when you are just bored of making them. These snickerdoodle blondies bars have the same texture as a brownie but are more of a vanilla flavor with cinnamon and sugar taste! These are so light and fluffy compared to a heavy rich brownie you will want to make them all the time! I hope you enjoy this delicious cinnamon and sugar treat!

Here’s what you’ll need….

2 2/3 cups flour
2 tsp baking powder
2 cups packed brown sugar
1 cup salted butter, room temperature
2 eggs
1 Tbsp vanilla

1 tsp of ground cinnamon for batter

Cinnamon and Sugar topping: 
2 1/2 Tbsp white sugar
2 tsp ground cinnamon

Pre heat your oven to 350 degrees.

First, combine the butter, eggs, brown sugar, and vanilla in a large mixing bowl or kitchen aid!

Add in your dry ingredients. The Flour, baking powder and ground cinnamon.

 Grease or Pam 1- 9×13 dish.  Pour the batter into the greased pan. The batter will be very thick and sticky. It’s almost like a cookie mixture. But don’t worry that’s exactly what your going for! (PS I Doubled this batch that’s why there’s 2 pans!)

Combine the cinnamon and sugar topping ingredients and sprinkle over the top of batter! Make sure you get it all over every section so each piece gets some!

Bake at 350 degrees for 25-30 minutes . Once it cools, it will harden on the top a little bit. Don’t worry the center will still be perfectly light and chewy!.

The Perfect Cookie- With Reese’s Pieces

Ever wonder why your cookies sometimes come out to hard, flat, think, not thick enough and so on… well its mostly because of the temperature of the butter you use but my little secret will get you perfect, soft, thick cookies every time! Its Instant Vanilla Pudding!!! I know sounds a little crazy butttttttttt…. It makes your cookies perfect every time!!! Fill free to add different times of flavors to these like white chocolate chips, M & M’s, nuts, and so on. I was craving peanut butter so I went with that and of course chocolate!!!!  I hope you enjoy these perfect cookies!

Here’s what you’ll need….

1 stick/1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/2 cup packed light brown sugar

1 large egg

1/2 teaspoon pure vanilla extract

1 1/2 cups all purpose Flour

3 tablespoons Instant vanilla pudding mix- My Secret Weapon!

1/2 teaspoon baking soda

1/2 teaspoon kosher salt

3/4 cup chocolate chips

1-1 1/2 cups Reese’s Pieces

 

Makes 2 dozen cookies

First, Preheat oven to 350 degrees and line a large baking sheet with a silpat liner or parchment paper. If you don’t have either then just spray your pan with a little pam or non stick spray!

In a large mixing bowl cream your butter and sugars until well combined.

Add your egg and vanilla mixing to combine.

Add your flour, pudding mix, baking soda and salt, stirring to combine.

Now for the good stuff….Add the chocolate chips and Reese’s pieces and fold in to combine.

With a medium cookie scoop, place dough 1 inch apart from each other.

Bake for 10-12 minutes until cooked through.

Let cool on cookie sheet for 10 minutes before transferring to cooling rack.

Banana Bars with Cream Cheese Frosting

Are you sick of the same old BANANA BREAD- Well here is a great solution for you when you have those extra ripe bananas and you do not want to throw them away. I think I might actually prefer these over the banana bread-I KNOW…. How can that be???? You will just have to make them yourself and try them out and see. The texture is so light and fluffy, and talk about MOIST! Yummmmy. I hope you like these as much as I did. You do not have to put the cream cheese frosting on if you would not like. Also for extra delicious- ADD CHOCOLATE CHIPS! Enjoy!

Here’s what you’ll need…

½ cup butter, softened
1 ½ cups white sugar
2 eggs
1 cup sour cream
1 tsp vanilla
2 cups all-purpose flour
1 tsp baking soda
¼ tsp salt
1 cup mashed ripe bananas (I used three ripe bananas)

For the Cream Cheese Frosting you will need…

1 package of regular cream cheese

1-2 cups of powdered sugar- depending on how sweet you like it. (I like it with 1 1/2 cups)

1 TSP of vanilla

 

First, preheat the oven to 350 degrees. Grease a 10 x 15 inch jellyroll pan or one 9X13 pan and an additional 8X8 pan.

In a large bowl, mix together the butter and sugar until smooth and creamy.

Next, beat in the eggs, one at a time, then add in the sour cream and vanilla.

Combine the flour, baking soda and salt in a medium bowl, then add  into the batter.

Finally!!!! The Star of the show- mix in those ripe bananas.

Spread evenly into the prepared pan(s).

Bake for 20 to 25 minutes, until a toothpick inserted into the center comes out clean.

While your banana bars cook, mix your cream cheese frosting all together with a mixer until creamy.

(SORRY I MAKE CREAM CHEESE FROSTING SO MUCH I FORGOT TO TAKE A PICTURE!)

FYI-Allow bars to cool completely before frosting OR YOU WILL HAVE A MELTED MESS ON THE BARS! I usually wait about 30-45 mins.

Spread over the whole top or slice your bars and use a dollop of cream cheese frosting on each piece!

Cucumber and Tomato Salad

Simple and easy, cucumber and tomato salad. 3 ingredients really? You cant go wrong. I make this a lot for family dinner because it is 1, easy to make for 20 people… and 2, its very inexpensive. This is great for the summer, Italian night, BBQ’s and just a simple side for any dinner. I make this a lot in the summer because its perfect tomato season and everyone has tomato plants it seems like! I hope you enjoy this simple but yummmmmmmmmmmmy salad.

Here’s what you’ll need….

Your favorite Italian Dressing- My favorite is King Soopers brand- Light and Zesty!

Cucumbers

Roma Tomatoes

Salt and Pepper to taste

*****I use 3 Roma Tomatoes for every 1 Large cucumber.  That serves about 2-4 people. SO Double or triple it depending on how many people you are serving!*****

First, your going to want to slice of the ends of your cucumbers and tomatoes. Also Skin/peel your cucumbers.

Slice down the middle or in half and cut into 1/4 inch strips.

Slice your tomatoes the same way.

Add to a large bowl and sprinkle with salt and pepper. Tomatoes always taste better when you salt them! Brings out the flavor.

Last but not least. Add your Italian dressing. You want enough to cover all the pieces and leave a little bit of dressing on the bottom so you have extra for people who like it and so it really sets into all the pieces for the most flavor!

Chill in the fridge 30 minutes to hours before so the tomatoes and cucumbers can suck up all the flavor.

Jalapeno Popper Dip

Everyone loves Jalapeno Poppers… Sometimes they are not the easiest or most time consuming way so….. How about the same great taste in a dip! Mix it together then pop it in the oven and let it cook! Eassssssssssy! Be careful…. This may be addicting!

Here’s what you’ll need…

2 packages (8 ounces each) of SOFTENED cream cheese

1 cup of Mayo

½ cup shredded Monterey Jack cheese

¼ cup chopped green chilies

¼ cup of a jar of jalapeno peppers- diced

Extra whole slices jalapenos for topping

1 cup shredded Parmesean Cheese

½ cup of Panko bread crumbs

 

I served this with Ritz crackers. Also great with bell peppers, corn tortilla chips, wheat thins.

First, Dice up your ¼ cup of jalapeno peppers.

Add your first 5 ingredients in a mixing bowl and blend and mix together.

Next add to a baking dish and top with your Parmesan cheese and top with the whole slices of Jalapeno Peppers

Top with Panko bread crumbs.

Bake in the oven at 400° for 25-30 minutes or until lightly browned on top.

Chocolate Chip Cookie Bars

Yummmmmy…. Chocolate Chip Cookie Bars… These taste just like your favorite chocolate chip cookies but light and fluffy like the texture of a brownie! Oh and Half the mess with just one pan and you don’t have to roll into balls for cookies! Oh did I mention how fluffy and thick these things are! You love them I promise! Have fun with these and add in different types of  yummy chips or nuts to really make them into your favorite!

Here’s what you’ll need….

1 cup butter, softened

1 cup (packed) brown sugar

1 large egg

2 tsp. vanilla extract

2 cups all-purpose flour

1/2 tsp. baking soda

1 bag (12 oz) semisweet chocolate chips

Fill free to add other chips. I did half semi sweet and half white chocolate. Also try it with Peanut butter chips, or butterscotch!

First, preheat oven to 300 degrees F.  Then spray an 8×8 baking pan with cooking spray. Yes this is a square pan!

Now let’s make the good stuff…. the cookie dough! With an electric mixer or kitchen aid, blend the sugar and butter until creamy.

Then, add your 1 egg and the 2 tsps. of vanilla and beat at medium speed until light. creamy and smooth. Don’t taste it yet, Wait till the end!

Scrape down the sides of the mixing bowl, and then add the flour and baking soda. Blend at low speed until combined.

 FINALLLLLLLLLLLLY, add the chocolate chips and fold them into the dough with a spoon or spatula! Now you can sneak a taste! Don’t worry… No one’s watching!

Now place your yummy batter into your 8 x 8 pan and smooth the top to make it even all over.

Place your pan in middle of the oven and bake for 35 to 45 minutes or until toothpick comes out clean but center is still soft. Cool on rack for about 20 minutes or so. (If you can even wait that long!!!!!)

When cooled, use a knife to cut into small bars.
